Paleo Almond Joy Bars

Let’s hear it for all the Almond Joy Lovers! 

The infamous Almond Joy candy bar used to be one of my favorites back in the day when I used to eat a lot different than I do now. I got to thinking that there has got to be a way to make these creamy coconut filling candy bars in a healthier version for those that just need a treat once in a while so they don’t completely bomb it!  Quality chocolate, coconut, and almonds are actually all super foods  🙂  I am all about super foods, especially ones that taste good!  These Paleo Almond Joy Bars are melt in your mouth good.  They went over well with my family, the ultimate taste testers 🙂

Every once in a while I get a craving for something sweet and find that these are good to keep on hand for just such an occasion.  I think these would make wonderful gift ideas, they are quite decadent.

 

Ingredients:

1 can organic full fat coconut milk 

2 cups  unsweetened organic shredded coconut

1/3 cup organic coconut flour

1/3 cup raw honey

2 tsp. organic vanilla extract

1 tsp. organic almond extract

2 droppers liquid stevia

30-35 toasted organic almonds

1 pkg. chocolate chips ( I use Lily’s Dark Chocolate stevia sweetened Chips like these ones here.)

 

Instructions:

  1. Mix shredded coconut, coconut flour in a bowl.
  2. Mix coconut milk, honey,vanilla, almond extract, and stevia in a separate bowl.
  3. Now mix the dry ingredients with the wet ingredients.
  4. Line a baking sheet or pan with parchment paper and use about a tablespoon of coconut filling for each bar and shape like the ones in the picture 🙂
  5. Put pan in freezer for about 1 hour  AND MEANWHILE………..
  6. Melt the chocolate in a double boiler and set aside to cool , not to cool completely but enough to easily coat the bars.
  7. Put almonds in a lightly greased pan ( I use coconut oil ) , then put pan in oven that is  350 degrees for about 20 -25 minutes and stir occasionally till they are golden.
  8. After a hour take bars out of freezer, put 2 almonds on top of each bar and pour chocolate over the bars carefully.
  9. Put bars in the refrigerator for about 30 minutes for chocolate to completely harden.
  10. Makes about 15 bars  🙂

I do keep these melt in your mouth goodies in the refrigerator to stay firm.  I hope you like these as much as we did!
