Delicious Stuffed Baby Bellas

These Delicious Stuffed Baby Bellas are quick to make and pleasing to the palate 🙂

What’s not to love about the combination of shrimp, cream cheese, and well…………baby bella mushrooms?
These serve better as appetizers than the larger portabella mushrooms and that’s why I chose the minis  🙂
Make sure to choose shrimp that is “wild caught” from a clean source and not “farmed”.
Farmed shrimp has more contaminants and tested samples
have been revealing that some of the shrimp is testing positive for  nitrofuranzone, a carcinogen that is used as an antibiotic.
The levels were disturbingly high.
Another antibiotic called chloramphenical is being used at levels way past the legal limit. Yikes!  That is scary!
So………………….. find a good source of shrimp.
Clean sourced shrimp  are a good source of healthy fats, selenium, astaxanthin, and protein.
So…preheat your oven and let’s get going on these little goodies.


Delicious Stuffed Baby Bellas


1   4 oz. can of wild caught pink shrimp ( this is the brand I use and trust )

2 minced sweet mini peppers

2 tablespoons softened cream cheese

1/4 cup finely grated cheese ( I used gouda )

1/4 cup fresh chives or diced up green onion stems


  • Wash 12-15 baby bellas gently in cold water.
  • Gently remove stems.
  • Pat the mushrooms so they are not dripping wet and set aside while you prepare the stuffing mixture.
  • Mix all the above ingredients except the grated cheese and chives and, stuff the bellas.
  • Place the stuffed bellas on a greased 9X13 baking pan.
  • Sprinkle grated cheese and chives on top of bellas.
  • Put in oven on 350 degrees uncovered for about 15-20 minutes.
  • After they have cooled off a bit, enjoy!

These stuffed baby bellas are not only a great appetizer but go well as a side dish too!  I am thinking they would go along quite well on a plate next to some tenderloin  🙂  YUMMILICIOUS!
