Cream of Butternut Squash Soup

This soup is a very creamy and savory soup packed with lots of flavor.

If you are a squash lover, then you will LOVE this recipe.
Also it is great served up with a side of coconut flour dinner biscuits too 🙂

Butternut squash contains  a lot of good fiber and nutrients making it a heart healthy food.
It also contains a good amount of potassium (needed for strong bones and a healthy heart) too and is rich in antioxidants which are free radical scavengers to help protect from various cancers in the body.
Also being  rich in beta-carotene and vitamin A  it helps boost the immune system and reduce inflammation.
Because butternut squash is low in calories but high in fiber it makes a great nutrient dense option  on any weight loss plan. Happy dance 🙂

Ingredients:

1- medium size butternut squash roasted
5 -cups organic  chicken broth
5- Tablespoons Ghee divided (clarified butter, usually not problematic for dairy sensitive people
because the hard to digest milk proteins have been removed)
or if not dairy sensitive use butter instead
1- large onion diced
2-stalks celery diced
2-teaspoons granulated garlic
salt and black pepper to taste
Optional: 1/2 cup coconut milk
Optional: 1/2 pound cooked ,diced organic nitrate free bacon  or 1 teaspoon organic smoked paprika

Instructions:

Wash and cut in half lengthwise your butternut squash. Spoon the seeds out.
Lay face down in about 1 inch water in your baking dish.
Bake at 375 degrees for about 1 hour or until squash is fork tender.
Let cool completely.

Meanwhile as your squash is cooling sauté your other vegetables in 2 Tablespoons ghee or butter till tender.

Once squash is cooled peel off the skin or scoop out the squash from the shell and put
into your  food processor with the sauteed vegetables.
Puree until all is of a smooth consistency.
Put into a large soup pot and add in your chicken broth , other seasonings and the optional
coconut milk and bacon at this time if you are using.

Note: The bacon adds a really nice flavor to the soup ,but it is still delicious even without it 🙂
Heat soup till warmed through. Serve and enjoy!!
