Biscuits and Gravy (Dairy and Grain-Free)

One of our favorite hearty breakfast recipes.
In fact, sometimes I make it for dinner.

Made the traditional way ,
biscuits and gravy are a popular dish, especially in the southern United States.
What’s not to love??!! A creamy sausage gravy over soft dough biscuits, mmmm,mmmm!  🙂  Comfort food right up my alley!!

Let’s get going and whip up a batch 😉

**** First ,you will want to make your biscuits.

Coconut Flour Biscuit recipe (Super easy!!)IMG_3896[1]

– 3/4 cup coconut flour
– 1/2 tsp.baking soda
– 6 Tablespoons melted Ghee
Note: It is made dairy- free with Ghee as the  exception. Ghee is clarified butter from which the hard to
digest  milk proteins casein, lactose and whey have been removed.
It is not problematic for most people who do not have a severe dairy allergy.

– 6 medium eggs
– 1/2 dropperful Sweetleaf steviaclear or 1 teaspoon honey
– a few dashes salt

Mix all ingredients together very well and scoop by heaping tablespoonfuls onto a parchment paper lined baking sheet.
Bake at  375 °F for 10-15 minutes until just starting to get a little golden brown around edges only or when centers are firm to touch.
Makes approximately 12-15 biscuits.
Set aside on a cooling rack.

IMG_3909[1]Sausage Gravy:

– 2 pounds organic pork, turkey, or chicken sausage (I get mine in the organic meat section at Woodman’s Grocery Store).
One of my favorites to use is Beeler’s ready to cook Maple Flavored Pork Breakfast sausage. It is delicious!!
Note: See my homemade sausage recipe below if you would rather make your own.
– 2 cup filtered water
– 2 cup coconut milk or if not dairy sensitive use cow’s milk.
-2  1/2 Tablespoons Arrowroot starch (GF thickener and non- gmo)

Brown and crumble sausage till cooked through.
Add  water with  arrowroot starch mixed into it to the cooked meat and drippings.
Next, add in the coconut milk and blend well.
Heat thru to a nice thickened gravy consistency.
Lastly, add in salt to taste and 1 dropperful Sweetleaf Steviaclear .
Serve immediately over biscuits and enjoy. Drench them good!! Next step, Enjoy!!!

Lana’s Homemade sausage Recipe:

-2 pounds ground organic pork, turkey, or chicken
-2 Tablespoon ghee (clarified butter) or coconut oil (I use the refined for cooking, it does not have the coconut taste) only if your meat is extra lean.
-2 T. ground sage
-2 teaspoon salt
-2 teaspoon honey or 1/2 dropperful Sweetleaf Steviaclear
-1 teaspoon dried ,crushed fennel
-1 teaspoon dried rosemary
-1 teaspoon black pepper
-1/4 teaspoon  ground nutmeg

Optional:
1/4 teaspoon red pepper flakes and a big pinch of ground cloves

Mix all ingredients together very well. Crumble and cook till no longer pink inside.
Save meat drippings with meat for sausage gravy.
