Beef & Bean Vegetable Chili Paleo Style

I am always looking for ways to get lots of vegetables in every meal I can. They fit so nicely in this dish.  🙂
This chili is truly a comfort food dish especially on those cooler , more blustery days . It’s so simple to make and very satisfying especially for those heartier appetites 🙂
A good sprouted cornbread to go on the side perfectly pairs this up.

Ingredients:

1 pound organic or grass fed ground beef (ground turkey or chicken can be easily substituted for the beef)
1 quart jar organic spaghetti sauce plus 1 quart water
2 cans  organic black beans or white beans
1 can  organic kidney beans
1 can organic garbanzo beans
2 large carrots , cut into coins
2-3 stalks celery
1  organic bell pepper diced
1 organic onion diced
1  organic zucchini chopped
fresh organic cilantro chopped (or dried if you do not have fresh)
2-3 teaspoons  organic chili powder
1 tsp.  organic garlic powder
1/2 tsp. smoked organic  paprika
real salt and pepper to taste
optional: you can add 3-4 drops liquid stevia (this is the kind I get, I love it!!)
or a good pinch of raw sugar, this little bit of sweetness really makes the flavors pop!!

Cook and crumble the beef over medium heat plus one cup water (this will make a nice stock) ,add cut up peppers and onions and cilantro  halfway thru. Once done , set aside and cover.
Next, cut up your all your other vegetables and steam them (this locks in all the nutrients and vitamins) till just fork tender.Once done add them to the meat and veggie mixture.
Add your 4 cans of drained beans ,  your spaghetti sauce and 1 jar of water ( just use the spaghetti jar) .
Add spices and seasoning and optional stevia or pinch of raw sugar at this time.
Stir well and cook till completely warmed thru.

optional—Sliced avocado over the top of each bowl for a nice, delicious garnish.

Serves 6-8 people

Note: My girls do well with dairy (I don’t 🙁 )So they will put a nice dollop of sour cream on top of their chili and /or some grated cheese. Yum!! So go enjoy a bowl right now 🙂
