This nutritious and high in fiber Tasty Two Bean Super Salad
contains lots of healthy and yummy tasting veggies and herbs and is sure to please the palate.
This is one of my favorite go to snacks to have on hand in the fridge. It is also good to make as a side dish or as a meal all by itself. When we have special gatherings around the holidays this salad is one of the first things that quickly disappear. I grew up with my mom making this salad often, I just decided to “tweak” it a bit for added health benefit. Let’s go bean lovers!
Tasty Two Bean Salad
Ingredients:
1 can black beans
1 can kidney beans
1 small onion diced
2-3 stalks celery diced
3-4 mini sweet peppers diced
3 “healthy” pickles diced ( I use my own or most health food stores carry “Bubbies” )
2-3 tablespoons organic mayonnaise or…..make your own 🙂
organic dill weed to taste
mineral rich sea salt to taste
organic onion powder to taste
pepper to taste
shake or 2 of nutritional flakes
Instructions:
Mix the beans, vegetables, seasonings, and mayo. For added kicks and giggles, sprinkle some dill on top too 🙂 I like to eat it right away but others may want to chill the salad for about an hour. Either way you choose, this salad is delish! This salad is nutritious and high in fiber. Enjoy!
