This salad is just perfect for those nights you want a super quick and nutritious meal.
I always try to incorporate a lot of vegetables into my daily diet because their so nutrient packed and
this salad is super loaded with lots of colorful veggies .Yum!!
It’s quick and easy to put together too 🙂 and super,duper delicious!!

Ingredients:
2- 4 ounce cans baby shrimp drained – (this is the one I use, its wild caught)
1 carrot cut into small pieces
1 stalk celery sliced thin
2-3 radishes cut up
1/2 cucumber diced
1/2 red bell pepper diced
1 cup halved cherry tomatoes
1 clove garlic minced
1/2 of a small onion diced
1/2 of a small zuchini diced
1 avocado diced
a few sprigs of fresh cilantro cut into small pieces
3/4-1 cup Primal Kitchen Chipotle Lime Mayo – this one is super yum!! (or use your own favorite mayonnaise) or try this delicious homemade one here.
1/2 teaspoon Herby organic herbs and sea salt blend
(or you can use just plain sea salt too)
A squeeze of lemon
Instructions:
Put your can of drained shrimps into a medium size mixing bowl. Add in all your cut up vegetables,seasonings , mayonnaise and mix well .
Optional: Put on top of a bed of fresh spinach.
Eat right away or if you have time to let it chill a bit in the refrigerator and for the flavors to marinate a little bit its even better!! Enjoy!! Bet ya can’t eat just one bowl 🙂
