I have a special kind of love for pizza!!
However,
when you are on a gluten/grain free diet you gotta learn to revamp somethings
if you still want to enjoy some of your favorite foods and without health setbacks because of it.
That’s exactly what I did here. This recipe is now a huge hit in my home. It truly is super delicious, trust me on this 🙂
It’s even nut free! A lot of paleo recipes for pizza crust call for almond flour.
This is ok once in a while but you don’t want to over do it on nuts either.
However, soaking and dehydrating your nuts does make them more digestible.
This crust is so simple to make and it tastes every bit as good without the cheese, I’ve tried it both ways.
Just sauce and vegetables on the crust was delicious. I also put some uncured turkey pepperoni’s on it too.

Makes about 8-10 mini pizzas.
Ingredients for crust:
• 3 large eggs
•6 Tablespoons coconut oil,ghee or butter if you are not dairy sensitive
• 1/2 cup warm water
• 1/4 teaspoon mineral rich celtic sea salt
•1/2 teaspoon organic Italian Seasoning
• 3/4 teaspoon organic garlic powder
• 1 1/3 cup arrowroot flour or tapioca flour
•2/3 cup organic coconut flour
• Optional: 2 Tablespoons Nutritional flakes
Toppings:
•One jar of your favorite organic spaghetti or pizza sauce.
•8-10 ounces cheese of choice (swiss, gouda or mozzarella, all work well).
• Veggies: (which ever ones you prefer) bell pepper, onion, black olives, diced fresh tomato, mushrooms,
spinach, garlic cloves,etc.
***I was lucky enough to find nitrate free turkey pepperoni for my pizzas.
You should be able to find them in the health foods section at your grocery store.
I get mine at Woodman’s Grocery.
They are delicious!!***
Note: Try not to put too many toppings on as it could make the pizza crust kind of soggy and they won’t cook up quite as well.
Instructions for crust:
Whisk eggs in a medium size mixing bowl.
Add melted oil, ghee or butter
(let cool a bit first before adding to your eggs so they will not start to scramble).
Next, add water, salt , seasonings, and nutritional flakes if you are using those and mix well.
Next, add in arrowroot or tapioca flour and coconut flour.
Continue to mix all ingredients together till very well combined.
Line a cookie sheet with unbleached parchment paper and drop dough by 2-3 tablespoons for each mini crust.
Take a small square size piece of parchment paper about the size of your hand
to use to flatten the dough into a circle without it sticking to your hand or spoon.
This worked very well for me.
The dough can get quite sticky otherwise.
You may only be able to fit 4 mini crusts on a baking sheet at a time.
Next bake in a hot oven of 450 degrees for about 10 minutes or until they are starting to get slightly golden brown around the edges.
Take out of oven and keep them on cookie sheet to cool about 5 minutes.
Next, spread about a tablespoon of your favorite organic pizza or spaghetti sauce on each one and top with grated cheese of choice
and whatever toppings you choose.
Put back in the oven for a remaining 8-10 minutes or until cheese is melted.
Let cool 5 minutes and let the feasting begin 🙂
