Simple Gluten Free Strawberry Banana Cake

I don’t know about you but I just love my treats!
However I don’t want a bunch of excess sugar in my diet either and other junk a lot of cakes and treats are made with.
Oh, they taste yummy and all, but they are not so good for you.
Well, I’ve found a way to have my cake and eat it too so to speak 😉
But made with very healthy ingredients yet without compromising  on any bit of deliciousness  🙂
This strawberry sweetness is packed with tons of  flavor and is super delicious!!
You will not be disappointed.

Simple Gluten Free Strawberry Banana Cake

Ingredients:

1 cup organic coconut flour
1 tsp. baking soda
1 tsp.baking powder
1/8 tsp. REAL salt
8 eggs
1/4 cup melted organic coconut oil or ghee
1/4 cup honey plus either 1/2 tsp. monk fruit sweetener or 2 droppers full of Sweetleaf Steviaclear extract
2 large,ripe bananas (mashed)
1 Tbsp.vanilla
1  1/2 cups grated strawberry ( I grate them while they are frozen which works very well or put in food processor) I buy frozen organic strawberries in bulk at Costcos at a great price 🙂

Instructions:
Mix together all dry ingredients and set aside.
Next beat your eggs in a mixing bowl then add in the melted coconut oil or ghee, honey and other sweetener of choice listed, banana and vanilla. Slowly add in dry ingredients and combine well.
Lastly add in strawberries and mix all ingredients together very well so there are no lumps.

Pour into your lightly oiled  13×9 inch glass baking dish. Place in preheated oven at 350 for 30-35 minutes or until middle is springy to the touch and edges golden brown.
Let cool completely on a rack . Now you are ready to frost. (See recipe below!)

Strawberry Cream Cheese Frosting Recipe

 

Ingredients:

1 -8 oz. cream cheese (room temperature)
4 T. butter or ghee
1 tsp. vanilla extract
2-3 dropperfuls of Sweetleaf Stevia clear or sweetener of choice
4-5 frozen strawberries grated

Instructions:

Melt cream cheese and butter together in a pan over medium heat. Stir and combine till creamy. Next add in vanilla and stevia or other sweetener and strawberries. Mix well. The strawberries will turn the frosting slightly pink which is what you want.
Set aside for 10-15 minutes so it can cool somewhat.  Once cooled, spread over cake. You may need to refrigerate for about an hour or so . This way the frosting will set up nicely. Oh, I almost forgot, wouldn’t some dairy free ice cream go alongside this cake well?  Guiltless dairy free ice cream that is. You can look naughty by indulging, little do your friends  know you are eating desserts that taste better than theirs and you are actually eating superfoods!
