Paleo Chicken Salad Recipe (Dairy and Gluten Free)

Looking for a refreshing and new dinner idea??

Here’s a great one to try. This scrumptious chicken salad…… paleo style .
It’s delicious and you feel  so good eating it because it’s also very healthy for you.
Made with simple ingredients and easy to put together, my kind of recipe 🙂

Ingredients:
3-4 cups cooked and cut up  organic chicken
1  1/2-2 cups mayonnaise (use this one here ) or use my easy recipe to make your own paleo mayonnaise here.
1/2 cup diced celery
2 cups chopped fresh spinach
a few fresh sprigs diced parsley (or dried if you don’t have fresh)
2 diced granny smith apples
3/4 cup chopped pecans
1/4 teaspoon smoked paprika
1/2 teaspoon garlic granules
1 teaspoon onion powder
salt  and  pepper to taste

Instructions:

Combine all ingredients together in a mixing bowl.
Let chill for a few hours in the refrigerator to let those awesome flavors penetrate thru.
Serves 2 .
