No Bake Coconut Turtle Delights

I was craving a treat one day, but not just any treat.  

It had to be something to keep me from getting into trouble in the grocery store. I hate to say it but all to often I end up shopping when I am hungry, it’s just how it works out sometimes.  Well, let’s face it, if I know I have an incredible, earth shaking, over the top  delicious standby at home, I won’t fall into the “temptation trap” out there in that cruel world 🙂 So……………. I decided to put my “creating hat” on and run to the kitchen, and WALAAA!  The No Bake Coconut Turtle Delights were born!

No Bake Coconut Turtle Delights

Ingredients:

2 cups almond flour ( I used blanched )

1 and  2/3 cup unsweetened shredded organic coconut

pinch of Real Salt

4 tsp. organic vanilla

1/4 cup coconut oil ( melted )

1 Tablespoon honey

2 droppers full stevia

16 Medjool dates pitted and soaked

3/4 cup chocolate chips

Instructions:

– Put aside the dates after they have been pitted in enough warm water to cover them for about half hour so as to soften them.

– Mix the 2 cups almond flour, 2/3 cup of unsweetened shredded coconut, and salt in a bowl.  Now add 1 Tablespoon honey, 2 droppers of liquid stevia, 2 tsp. vanilla, and 1/4 cup melted coconut oil and blend well.  This will be your bottom layer  🙂

– Take  this mixture and make several  1 inch balls and flatten them out to about 1/8 inch thickness   ***** see picture***** place on 13×9 pan lined with parchment paper

– Now lets work on the middle layer 🙂 Take the dates and drain off water, put in food processor along with 2 tsp. vanilla, and 1 cup finely shredded coconut. blend well for a few a couple minutes. This is the next layer for you to put on top of the bottom layer.

– Now, for the top layer. Melt 3/4 cup of chocolate chips in a double boiler. Let it cool just a bit so it’s not to hot and then put some on top of the other 2 layers.

– Store them in fridge and take out about 10-15 minutes before you eat them.

– Enjoy!
