Gluten Free Buttercream Cupcakes

These are no fail cupcakes.

They are very delicious and you could never tell they are gluten free because the texture is incredible.  They are quite a delicacy with the buttercream frosting, whoot! whoot!  It’s a win win when you are looking for something sweet that is gluten free and doesn’t taste like cardboard. Smile.

If I have a cupcake they have got to be moist, and moist these are 🙂 I like the fact that these are very yummy even without the frosting,  that’s a true sign of a good cupcake in my book.  I also love that these have no refined sugar and they are still amazing, but, you don’t have to take my word for it.  Let’s get our baking hats on 🙂

Gluten Free Buttercream Cupcakes

Ingredients:

1 cup Gluten Free Perfect Flour Blend

1 tsp. baking .powder

dash of  celtic sea salt (more mineral rich)

1 tsp. ceylon cinnamon

1 cup coconut milk ( I dilute my can of coconut milk with 1 can of good water and then measure it out )

2 eggs

1 tsp. vanilla

3 droppers english toffee stevia drops

1 Tablespoon coconut oil

2 tablespoons honey

3 droppers stevia

Instructions:

While you are preheating your oven to 350 degrees……………..

  1. Mix all the wet ingredients in a bowl and dry ingredients in another bowl
  2. Combine the dry and wet ingredients and blend well.
  3. Use coconut oil to grease your muffin pan ( this recipe makes 6 muffins )
  4. Pour batter into the muffin pan
  5. Put muffin pan on middle rack and bake for about 18 minutes or until they are springy to the touch
  6. After you take out the muffins, let them cool on a rack in the pan for about 10 minutes, then carefully remove them from pan and put them back on cooling rack to finish cooling.
  7. Let’s make some frosting!  See below:

Buttercream frosting

Ingredients:

(note: I will also include a dairy free frosting option further down)

1 8 oz. cream cheese softened

4 Tablespoons softened butter ( I love to use the Organic Valley unsalted butter for it’s excellent flavor )

1 tsp. vanilla

1 Tablespoon honey

1-3 droppers of stevia ( some like different levels of sweetness, so…. add 1 dropperful and taste before adding more and add to your liking )

Instructions:

  1. Blend softened butter and cream cheese together well
  2. Add the honey, vanilla, and stevia and blend thoroughly together
  3. If those cupcakes are cooled, frost away!
