Looking for an equally delicious but way more healthy alternative to fruit pizza??

Look no further.  Want to try this but just can’t have dairy, no worries, none at all  🙂  Just see below for the Ultimate Dairy Free Frosting!
I had such a craving one day for fruit pizza,
but being on a sugar restricted and grain free diet,
that was one of the last desserts I thought I could have again.
That was until I got on my creative hat and “Voilla!!”
it happened.  🙂  Where there is a will, there is a way.
I put together the recipe below and had my taste testers
(who else, my family 🙂  sample a piece. It got gobbled up so fast
I knew I was onto something.
It had to be good , because they can be quite picky at times.
This one passed with flying colors.
I now make it for a breakfast in my house too 🙂
Hope you and your family enjoy it as much as we do. Dig in!!

Ingredients for crust:
•  1 + 1/2- cups almond flour. I like this brand here.
•  1 + 1/2- Tablespoons coconut flour
• 1 -egg
•  1- teaspoon Pure Monk Fruit sweetener Plus 2 droppersful of Sweetleaf Stevia clear extract
( or you can use 1/4 c. raw honey in place of the other two sweeteners)
• 1/2- teaspoon baking soda
•  a few good shakes Celtic sea salt
• 5- Tablespoons coconut oil, ghee, or organic unsalted butter
• 1- teaspoon vanilla
•  3/4- teaspoon cinnamon
• 1/4- teaspoon nutmeg

Instructions for crust:
Mix together all dry ingredients . Next, add in beaten egg, melted oil, ghee, or butter and vanilla.
Next, add sweetener of choice if you haven’t already done that and combine well.
Spread out into a greased 13×9 inch shallow baking dish or into a 12” round pizza pan.
Bake on middle rack for 12-15 minutes at 350 degrees and then cool completely.

 Ingredients for topping:   (dairy free recipe below for those avoiding dairy 🙂 )

•1-8 ounce organic cream cheese
4- Tablespoons unsalted  organic butter or ghee  (clarified butter)
3- droppers liquid Sweetleaf Stevia Clear
1- teaspoon vanilla extract
•1-cup fresh organic blueberries, raspberries, strawberries and/or kiwi

Instructions for topping:

Melt together cream cheese, butter, or ghee  and stir continually over medium heat till combined very well and of a smooth and creamy consistency. Set aside and add vanilla and stevia and continue to mix well. Pour over the crust and smooth over with the back of a spoon till crust is evenly covered. Add your desired fresh fruit on the top of the cream cheese frosting. You can eat right away or let it chill in the refrigerator for an hour or two before serving. Enjoy this delicious fruit pizza!!

Ultimate Dairy Free Vanilla Toffee Frosting!

• 1 + 1/4- cup organic shortening

• 3 tablespoons raw honey

• 6 droppers of english toffee flavored stevia extract

•  3- tsp. organic vanilla

• 1 -Tablespoon arrowroot flour

• 1 -Tablespoon tapioca flour

•  small pinch of salt

  1. Mix shortening, honey, stevia, vanilla, arrowroot flour, tapioca flour, salt together.
    I didn’t need a mixer because I used shortening at room temperature.  It looked wonderful, no lumps  🙂
