This recipe is excellent for those out there who are on a caffeine and/or dairy restricted diet.
I am still in the process of healing my adrenal glands . I had what you call adrenal fatigue.
(go here to learn more about adrenal fatigue)While healing my adrenals I was not supposed
to have any kind of stimulants like coffee (unless it’s like this one, swiss water decaf) or chocolate. I know, what a bummer!!!
However, I must say my white chocolate fudge is so delicious that I do not feel like I am suffering at all 🙂 So, no pity please 😉
Here’s one of my new favorite recipes.
Ingredients:
-2/3 cups melted coconut oil ( I used organic and refined so it didn’t have an overpowering coconut taste.)
-2/3 cups melted cocoa butter
-2/3 cup coconut milk powder like this one here
-1 teaspoon pure Monk fruit like this one here
-3 droppersful vanilla stevia like this one here
-1-2 teaspoons raw honey (depending on how sweet you like your chocolate)
-small pinch of salt
***Optional: I add chopped pecans and raisins/or dried cranberries to mine.
You could even do some raw coconut chips to add a little crunchiness, yum!!
Instructions:
Combine the melted coconut oil and cocoa butter together in a small mixing bowl.
Next, whisk in the remaining ingredients and mix well.
Pour into a smaller pan for thicker fudge.
I used a glass 7×7 pan.
Put in freezer for about 20 minutes or so for a quicker set or
you can put it in the refrigerator for 30-45 minutes.
I suggest covering the pan with a plastic wrap as it is hardening.
Enjoy your delicious fudge!!!
