Get ready for a mouthwatering, grain free , dairy free and virtually sugar free coconut flour pancake recipe. How much more guiltless can you get without skimping on taste and yumminess??!! Go ahead and eat as many as you like, they are practically a super food here 🙂 So Enjoy and eat up and let the merriment begin 😉
Coconut Flour Pancakes with Blueberry-Strawberry Sauce
Makes about 8-10-small pancakes (Serves 1-2 people)
Ingredients:
(The highlighted are products that I use!)
-2 tbsp.extra virgin coconut oil(use butter if you don’t have dairy issues)
-Your sweetener preference,some ideas: 1 T. honey,or 1/2 tsp. Pure Monk fruit sweetener,or 6 droppers full of Sweet Leaf Stevia Clear
-3 large eggs
-1 c. organic coconut milk (again you can use cows milk if no dairy issues,preferably organic)
-1 tsp. organic vanilla extract
-1/4 c. organic coconut flour
-1 tsp. organic ceylon cinnamon(optional)
-1/8 tsp. baking soda
-a few dashes of REAL salt
Instructions:
First mix together all the dry ingredients,than add in 3 beaten eggs (preferably cage free and/or organic).Next add in vanilla, sweetener, coconut milk and oil. Mix together very well till smooth and creamy texture and no lumps. Preheat your skillet.
Use a laddle and pour SMALL ( for easier handling ) amount of batter in your skillet on medium heat. Once the bottom is light brown it is ready to flip. If using a pan that in not a non-stick pan you will need to add more ghee, butter, or coconut oil as needed between flipping.
NOTE: They will not bubble as much as regular pancakes.
Serve immediately with either a drizzle of Pure Maple syrup (I buy mine at Costcos, its 100% pure and organic and at a great price too!! 🙂 or I make a natural sugar free blueberry/strawberry fruit sauce to top off my pancakes (see recipe below) . If you want to get really fancy dancy (like I do
😉 ) Than last but not least I top them off with a dollop or two of “So Delicious” Brand Dairy free Cocowhip (YUM!!) and a few sprouted pecans(see the picture)
Blueberry Strawberry Fruit sauce
Combine 1/2 cup of each frozen Strawberries and Blueberries in a sauce pan . (I buy mine in bulk at Costco . It’s about $10.00 for a 4 pound bag of organic frozen berries,which is a great price)
Add 3/4 c. water and 1/2 tsp. cinnamon(optional) and 3 dropperfuls of Sweet Leaf Stevia Clear and 1 Tbsp.Arrowroot starch (or GMO free cornstarch) to thicken over a medium heat. When slightly bubbly and visually thickening up it is finished.Now go drizzle some over your pancakes and enjoy a completely sugar free (apart from the small amounts of fruit sugar in the berries themselves) option to slather over your pancakes, OH YUM!!!!
