This is a wonderful paleo alternative to the Chinese version of chicken fired rice.
The cauliflower works very well as a rice substitute and is absolutely delicious!!
Chicken Fried Rice (Paleo Version)
Ingredients:
1-large cauliflower
2- pounds boneless,skinless chicken breast or thigh
2- large carrots grated
1- cup sliced mushrooms
2- eggs
2-3 green onions diced
7- Tablespoons coconut oil,butter or ghee(clarified butter, usually not problematic if dairy sensitive)
1- teaspoon garlic granules or 3 cloves minced garlic
1/4 to 1/2 teaspoon organic ginger powder
salt to taste
3- Tablespoons coconut aminos (resembles a light soy sauce,but is wheat and gluten free)
or your favorite fermented organic soy sauce
Note: Here is a wonderful Tamari (wheat free) organic soy sauce to try.
It is always best to consume only fermented soy products.
Optional: 3/4 cups lightly steamed green peas
Instructions:
Cook chicken over medium heat in 2 tablespoons oil till done. Set aside to cool before dicing.
Pulse the uncooked cauliflower in your food processor until it resembles the texture of rice.
Heat a large size pan on medium high heat with 3 tablespoons,butter,coconut oil or ghee..
Add cauliflower rice and stir-fry for about 7-8 minutes until just softened.Set aside.
Next stir-fry your carrots and mushrooms in 2 tablespoons oil of choice over medium high heat for about 4-5 minutes.
Add vegetables in to the stir-fried cauliflower with the cooked,diced chicken.
Cover on low heat while you are cooking the scrambled eggs in another pan.
Break eggs up into small pieces before adding them into the stir-fry with seasonings , salt(to taste),
coconut aminos and half of the diced green onions.
Now is a good time to add in your lightly steamed peas if you are using them.
Mix well and top with remaining green onions before serving.
Serves 4-6.
Best enjoyed when served immediately 🙂
