Here is that little “Cheat Treat” That tastes incredible!

Is it hard for you to go places and see people eat all those delectable desserts while you turn them away because you don’t want all the sugar or the gluten? Well, them days are no more. What if I told you that this muffin is loaded with super foods too? It is!
Can you imagine eating a dessert that is actually good for your health ?
They are made with lemon, coconut, blueberries, and yes, sunflower seeds! These are grain free and made with coconut flour. Only two tablespoon of honey for 6 muffins yet they taste perfectly sweet with the added safe sugar alternative “stevia”. The good news is if you are going dairy free, you can easily make this yummy muffin and omit the dairy by making these without frosting. They are still every bit delicious I assure you. I enjoy this recipe both ways. 🙂 It is next to near impossible to keep these in my house. I personally like these the best after storing them in the fridge vs. room temperature. It has the richness and density of a cheesecake like dessert. Caution: These are addicting!
A Little About Coconut Flour
Coconut flour has a generous amount of fiber, and protein. Coconut flour is the ideal flour for people who are going gluten free, have gluten sensitivities, and those with celiac disease. This flour has the highest amount of fiber out of any flour. Because this flour is low on the glycemic index it is the preferred flour for those with blood sugar issues and diabetes. This particular flour is a staple in Paleo diets when it comes to baked goods. On a low carb eating plan? This is the flour you want to use. The high fiber content helps you to feel full which means you eat less. So, with coconut flour you can have your cake and eat it too!
Ingredients
3 eggs
2 tablespoons melted butter ( Organic Valley Unsalted Tastes incredible) For dairy free: substitute with 2 tablespoons unrefined coconut oil
or Ghee (clarified butter for those with dairy sensitivities)
2 tablespoons coconut milk or organic cow milk
2 tablespoons raw honey
10- 20 drops liquid stevia
small pinch of REAL salt
1 tsp. organic vanilla
3 tablespoons organic lemon juice
4 drops organic lemon essential oil
1/4 cup plus 1 tablespoon (reserved) organic frozen or fresh blueberries * note* if using frozen, let them thaw on paper towel and pat them dry before using
2 tablespoons organic sunflower seeds
1/3 cup organic coconut flour
1/4 tsp. baking powder
Instructions
- Pre- heat oven to 400 degrees
- Mix together eggs, melted butter, coconut milk, honey, stevia, salt, vanilla, and lemon juice.
- Combine coconut flour with baking powder and mix well then mix thoroughly into the batter until smooth with no lumps.
- Add sunflower seeds and 1/4 cup blueberries to batter and mix in. Save the 1 tablespoon of blueberries for later when you frost the muffins.
- Grease muffin tins with coconut oil or butter and dust with coconut flour lightly.
- Fill muffin cups about 3/4 full and put into oven on middle rack for 15-17 minutes. Makes 6 muffins
Lemon Butter cream frosting
These are very good and moist and packed full of flavor,
so………..if you are going dairy free, no worries, they are still very good without the frosting!
Frosting Ingredients: (Contains dairy)
6 oz. room temperature organic cream cheese
4 tablespoons room temperature organic butter
2 tablespoons organic grated lemon peel
2 tablespoons lemon juice
4 drops organic lemon essential oil
15-20 drops liquid stevia
Instructions
- mix cream cheese and butter till well blended
- add lemon peel, lemon juice, and stevia and blend together thoroughly
- frost muffins when they are cooled
- I put them in fridge
- taste and enjoy and share the recipe with those you love 🙂
